Curry Crusted Tilapia
|2 (6-8 oz)||fillets of Tilapia|
|1 oz||Curry Powder|
|Salt and Pepper|
|Cucumber Riata Salad|
|1 sprig||Mint Basmati|
|4 oz||Cooked Rice|
1.Pat the Fish with a cloth to dry.
2.Season fish with Salt and Pepper.
3.Dredge lightly in Curry Powder.
4.Grill at 400 F for 6-8 minutes.
For Cucumber Riata Salad
1.Thinly slice English Cucumber.
2.Chop the herbs and Scallion.
3.Dice the Red Onion.
4.Add all ingredients in a mixing bowl and stir.
5.Season with Salt and Pepper.
